CSC Registered Dietitian, Marisa Moore, Provides Special Consultation to CDC

Marisa Moore, CSC’s Registered Dietitian for the CDC Occ Health program was recently recognized by CDC for her special contributions to the recently released My CDC Cookbook.

It all started during National Nutrition Month in 2006. CSC’s registered dietitian on the CDC Occupational Health and Prevention Services contract, Marisa Moore, conducted a program, Passport to Health. One unique program aspect invited participants to submit their favorite international recipes to share with other participants. This program idea caught the attention of CDC’s upper management, and CDC’s Office of the Director convened a work group to solicit international recipes from all workers at CDC facilities world-wide. The goal was to create an international cookbook – My CDC Cookbook.

Over 120 recipes were submitted to the Office of the Director. Next, CDC turned to Ms. Moore to perform a dietary review of each recipe. Ms. Moore looked at the potential health benefits of each recipe, for example low fat and high fiber content. She also looked at modifications that could be made to “less healthy” recipes without compromising their cultural integrity. Following her review Ms. Moore provided citations that were highlighted in the final cookbook for over 30 of the recipes noting either a health value or a potential modification.

Ms. Moore’s work for CDC on this project was noted by CDC Deputy Chief Operating Officer, Carlton Duncan for having made a special contribution to the success of this project. My CDC Cookbook was released to CDC workers in April of 2007 in conjunction with CDC’s celebration of National Diversity Month.
